Saffron Walden is a gorgeous town in Essex, very near the Cambridgeshire border. Narrow streets are crammed with medieval, half-timbered buildings, and like Ipswich, the local custom of pargeting is very much in evidence. As you might guess from its name, the towns prosperity was founded on saffron, which was harvested from the local crocus fields. Close by is one of the most extravagant Jacobean properties ever built, Audley End, which is now run by English Heritage.
