John Chu, who was commissioned to establish the restaurant in Canterbury's new wing, conducted a study tour to Hong Kong to investigate the latest trends, and has produced at Canterbury a truly stunning menu.

The restaurant itself is magnificently appointed, with its Pagoda style timbers, its bamboo curtain roof, its dramatic artworks and its watercourse, which gives the impression of floating on a lake.
