When City Cafe in Glasgow's swanky, modern new City Inn chose Richard Lyth, they found a man who would take this hotel dining room and make it some place special. The modern decor helps, all right, as does the location and the spiffy staff, but he is using all his expertise to create stunning modern cuisine that incorporates the best of Scottish raw materials.
