Celebrated chef Paul Heathcote has established one of the city's premiere eating spots in Manchester's charming old register office. Minimalist decor (private rooms retain the trad oak panelling), terrific food, smooth jazz and smoother service - Simply Heathcotes gets it right on every level. Menu is modern British, featuring dishes like roast Goosnargh duckling with cassoulet of baby veg, and cannelloni of marinated cod with poached egg, leek and mustard hollandaise. Black pudding is a favourite, when it's on. Bread and butter pudding is, too. Eclectic wine list; a dozen available by the glass.
