"Ty Gwyn came to life 23 years ago on Friday 13 August, when it was bought by Jim and Shelagh Ratcliffe because Jim wanted to retire behind a bar from his Jaguar dealership. The chef is their son Martin who is loath, after a recent TV series, to admit that he trained at Liverpool's Adelphi Hotel. A very different Adelphi from it present incarnation. When Martin trained there it had 35 chefs and the French Restaurant was world famous. Brother Tim is front of house and looks after the hotel side of the business and sister Nicola is the accountant. Big Daddy still vigorously pursues retirement behind the bar..."
