Red Rock Olive is a small family owned and operated business tucked away in Western Victoria on the eastern side of the glorious Grampians' Ranges. At Red Rock they produce an exquisite range of delightful gourmet Olive Oil products including cold pressed extra-virgin olive oils, infused oils, dressings and tapenades.
There are over 5,000 olive trees that grow in organically fertilized soil and are hand harvested each autumn and the green table olives in April. Kangaroos and Emus are kept well away from the grove through the use of a high fence encircling the property.
Off site, Red Rock Olives are cold-pressed at below 30°C in a state-of-the-art Italian oil press to maximize flavour and bouquet. The crushed olives are then fed into a centrifuge to separate the solid matter from the fresh oil. The varieties of olives used are Frantoio, Nevadillo Blanco, Manzanillo (also grown for table olives), Coreggiola and Koroneiki. Table olive varieties include Kalamata, Californian Queen (UC13A6) and Spanish Queen
